Taste the coffee black every time before adding cream or sugar- Before you add things to your coffee take a moment to taste it black. Don’t just take a sip, TASTE it. Think about what flavors you are getting out of your coffee and what you like and don’t like. If possible set a little black coffee to the side to taste again once it has cooled to room temperature. You will be surprised how much more pronounced the flavors are once the coffee has cooled a bit.

Coffee drinks are made by brewing hot water (or much less commonly, cold water) with ground coffee beans. There's also some evidence linking coffee itself to weight loss and weight control. One study, published in the International Journal of Epidemiology in 2015, studied the dietary habits of more than 93,000 people to look for patterns between coffee consumption and weight. The study authors observed that people who drank more coffee had a lower risk of obesity, as well as a lower risk of type 2 diabetes. A study with laboratory animals, published in Nutrition & Diabetes in 2014, found that mice that consumed coffee and were fed a high-fat diet gained weight more slowly than the mice that didn't drink coffee.
Coffee’s a diuretic. This means drinking coffee will make you urinate more frequently than if you didn’t drink coffee. This is a good thing in most cases because it keeps your system cleansed. The human body often flushes out harmful bacteria and viruses this way, and drinking coffee enhances this natural process. Through this, black coffee drinkers become sick far less often.
I don’t have a problem with people adding things to their coffee (my wife enjoys her coffee with cream and minimal disapproving head shakes from me) but I do think black coffee has its merits. It is my opinion that the vast majority of coffee additives are remnants from the first wave coffee notion that coffee is vile, caffeine is good and adding things to coffee makes it tolerable.

I’m also a fellow Paleo and I LOVE coconut milk (from the can) in my coffee, with a sprinkle of cinnamon and a drop of vanilla extract. Change your mug color– This is a somewhat obscure suggestion, but a year or so ago a small study concluded that mug color could have an impact on how we taste our coffee. Specifically, using a white mug instead of a clear mug can make you perceive a coffee as more bitter and less sweet. If you regularly drink coffee out of a white mug, try changing it up and using a clear mug instead.

You made a good point that clicked for me. I used to like my coffee very bold BUT then I added tons of stevia and half and half to mask the taste. Now, I’m starting to drink my coffee black (day 2 – eeek) and your comment made me realize that I don’t actually enjoy bitter tasting coffee – if I did I wouldn’t be adding sweeteners.
